How to make potato sausage.

Here is a recipe for making homemade potato sausage:

Ingredients:

  • 2 pounds of potatoes, peeled and diced
  • 1 pound of ground pork
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of dried thyme
  • 1/4 teaspoon of dried sage
  • 1/4 teaspoon of ground nutmeg
  • Natural casings or sausage casing

Instructions:

  1. Boil the diced potatoes in a pot of salted water until they are tender. Drain the potatoes and return them to the pot.
  2. Mash the cooked potatoes until they are smooth. Let them cool slightly.
  3. In a mixing bowl, combine the ground pork, chopped onion, minced garlic, salt, black pepper, dried thyme, dried sage, and ground nutmeg. Mix everything together until well combined.
  4. Add the mashed potatoes to the pork mixture and mix until the ingredients are evenly distributed.
  5. Prepare your sausage casings according to the package instructions. If using natural casings, rinse them well and soak them in water for about 30 minutes.
  6. Stuff the sausage mixture into the casings, using a sausage stuffer or a sausage attachment on a stand mixer. Twist the sausage into links of about 4-6 inches long.
  7. Preheat a skillet or grill to medium heat. Cook the sausage links for about 15-20 minutes, turning occasionally, until they are cooked through and browned on all sides.
  8. Serve the potato sausages hot with your favorite condiments or sides.

Note: You can also store the uncooked sausage links in the refrigerator for up to 3 days or freeze them for longer storage.
