Here is a recipe for making homemade potato sausage:
Ingredients:
- 2 pounds of potatoes, peeled and diced
- 1 pound of ground pork
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of dried thyme
- 1/4 teaspoon of dried sage
- 1/4 teaspoon of ground nutmeg
- Natural casings or sausage casing
Instructions:
- Boil the diced potatoes in a pot of salted water until they are tender. Drain the potatoes and return them to the pot.
- Mash the cooked potatoes until they are smooth. Let them cool slightly.
- In a mixing bowl, combine the ground pork, chopped onion, minced garlic, salt, black pepper, dried thyme, dried sage, and ground nutmeg. Mix everything together until well combined.
- Add the mashed potatoes to the pork mixture and mix until the ingredients are evenly distributed.
- Prepare your sausage casings according to the package instructions. If using natural casings, rinse them well and soak them in water for about 30 minutes.
- Stuff the sausage mixture into the casings, using a sausage stuffer or a sausage attachment on a stand mixer. Twist the sausage into links of about 4-6 inches long.
- Preheat a skillet or grill to medium heat. Cook the sausage links for about 15-20 minutes, turning occasionally, until they are cooked through and browned on all sides.
- Serve the potato sausages hot with your favorite condiments or sides.
Note: You can also store the uncooked sausage links in the refrigerator for up to 3 days or freeze them for longer storage.
